Description

Cutting dough with a knife drags and tears it instead of slicing cleanly, and a soft spatula bends before it gets through a firm slab.

This stainless steel scraper gives you a straight, firm edge to portion bread dough, cut pastry and scrape the bowl. It also works as a smoother for buttercream on cake sides, so one tool covers several jobs on the bench.

Choose 6" (15 cm), 8.5" (22 cm) or 10" (25 cm) to suit your board and the size of your bakes. Hand wash and dry it so the edge stays true for the next bake day.

Materials & Care

A stainless steel blade with a straight working edge, firm enough to cut through dough in one push. Hand wash it and dry it straight away to limit water spots, then store it flat so the edge stays true.

Portion without tearing

Press the edge straight down through the dough rather than sawing at it. The firm steel cuts in one motion, so the dough keeps its structure and each piece comes away cleanly. It makes dividing a batch into rolls or loaves quicker and more even.

One tool for the whole bench

Once the dough is divided, the same scraper lifts sticky bits off the board and clears the mixing bowl. On cake days, hold it against the side of the cake as you turn it to even out the buttercream. The longer sizes reach taller cake sides and wider loaves.
