Overview
Fishing fries or dumplings out of hot oil or boiling water with a spoon is slow, and it gets your hand far too close to the heat. A spider skimmer is built for the job. The wide, shallow wire basket scoops up a whole batch at once and lets the oil or water drain straight back into the pot as you lift, while the long handle keeps your hand well clear of the splatter.
The same skimmer lifts blanched vegetables and noodles, and skims foam off a simmering stock. It's stainless steel, so it won't rust. Let the oil drip off before you move it, and dry it after washing so it doesn't spot.

Lifting food out of hot oil or boiling water, the wide basket scoops a whole batch of fries, tempura, dumplings, or noodles at once and drains the liquid back into the pot as you lift.
It's quicker and lets you keep your hand back. The long handle keeps you clear of the splatter, and the open mesh drains far faster than a slotted spoon.
Blanching vegetables, boiling dumplings and noodles, poaching, and skimming foam or fat off the top of stocks and frying oil.
Rinse and dry it so the stainless doesn't spot, and clear any bits of food caught in the mesh. Hand washing is kindest.
