Why the set
Steel tempered twice
Wudy Kitchen
A wide chef knife in twice-tempered 40Cr13 stainless steel, with a thick spine that stays true through dense vegetables.
A thin blade flexes when you lean on it, and a flexing blade wanders off the line you meant to cut.
This wide chef knife has a 2.3 mm spine, enough steel to stay straight through a squash or a chicken joint without the dead weight of a cleaver. The blade is 40Cr13 stainless steel, tempered twice, so it takes a fine edge for everyday slicing and chopping.
The overall length is 12.5" (32 cm), so the handle clears the board and your knuckles stay above it. It suits vegetables and boneless meat. Hand-wash and dry it, and hone it when the edge starts pushing rather than parting.
Hand-wash with warm water and mild soap, then dry immediately. Store it in a knife block or on a magnetic strip. Hone regularly and sharpen when the edge stops biting.
