Description
Hand-pleating wrappers takes practice, and a loose seal means filling leaks into the pot or onto the steamer. Getting a whole tray to look the same is harder still.
This hinged stainless steel press cuts and seals the wrapper in one firm motion. Lay the dough over the mold, add a spoonful of filling, fold the press closed and squeeze. The result is a dumpling, ravioli or small pie with an even edge.
Choose Small, Medium or Large to match the wrappers you use. The Large mold is about 3.5" (9 cm) across. Store-bought and homemade wrappers both work, as long as they are soft and pliable.

Even seals, less mess
A dumpling that opens during boiling leaves you with empty wrappers and cloudy water. The press applies the same pressure around the whole rim, so the edges join firmly every time. Lightly flour sticky dough first so it releases from the mold cleanly.
One tool, many fillings
The same hinged mold handles savory pork dumplings, cheese ravioli or small fruit pies. Pick the size closest to your usual wrapper diameter and the whole batch comes out uniform, which also helps everything cook at the same rate. One press covers several kinds of dumpling night.
