Description

Parchment paper curls at the corners, slides on the sheet pan and always seems to run out halfway through a batch of cookies.

This thin silicone mat, reinforced with woven fiberglass, lies flat on your baking sheet. Cookies, pastries and roasted vegetables release cleanly from the surface, often with little or no grease. After baking, rinse it, let it dry and use it again instead of throwing away paper each round.

At about 0.4 mm thick, it adds no bulk under batter and suits everyday home baking.

Materials & Care

The mat is thin silicone over a woven fiberglass reinforcement layer, about 0.4 mm thick. Wash it with mild soap and let it air dry. Use a soft spatula and never cut on it, since blades damage the surface and expose the fiberglass.

A nonstick baking surface

Batter and dough lift away from the silicone once cool, so cookies come off whole with a thin spatula. Most cookies need no extra grease, though a light spray helps very sticky batters. The thin mat sits flush with the pan, so heat still reaches the base of each bake.

Rinse and reuse

When the tray has cooled, wipe the mat with warm soapy water or rinse it under the tap, then let it air dry flat. Store it flat or rolled loosely rather than folded. One mat stands in for many sheets of disposable paper over time.
