Why the set
Hammered face for food release
Wudy Kitchen
A hammered stainless steel knife with a wood handle, in a chef or vegetable profile, made to help slices fall away.
Herbs, thin fish slices and watery vegetables tend to cling to a flat blade, so every few cuts you stop to scrape the steel clean.
The hammered dimples on this 8" (20 cm) stainless steel blade break up that contact, so slices fall away and you keep a steady rhythm on the board. It is fitted to a wooden handle.
Choose the chef knife, with a curved belly for rocking through onions and herbs, or the vegetable knife, with a straighter edge for straight-down chopping. Hand-wash and dry it after use, and run it over a hone between prep sessions to keep the edge keen.
Hand-wash and dry right after use; do not put it in the dishwasher. Hone between prep sessions and sharpen on a stone when honing no longer restores the edge. Keep it away from bone, frozen food, and glass or stone boards.
