Why the set
Hammered release face
Wudy Kitchen
Hand-forged stainless steel knives with a hammered face that helps food release, in five blade styles or a 4-piece set.
Onions, herbs and other wet ingredients cling to a flat blade, and every few cuts you stop to scrape the steel clean.
These hand-forged knives have a hammered (tsuchime) face that breaks up that contact, so slices fall away and you keep a steady rhythm on the board. The stainless steel blades sit in wooden handles finished with a black collar.
Choose a santoku, chef knife, bunka chef knife, nakiri vegetable knife or sashimi slicer, or the 4-piece set. Single knives arrive in a lined gift box, which also keeps the edge protected in a drawer. Hand-wash and dry each knife straight after use.
Hand-wash with mild soap and dry straight away; do not put it in the dishwasher. Keep it off bone, frozen food and glass boards. Hone between sessions and sharpen on a stone as needed.
