Why the set
A blade sized for detail work
Wudy Kitchen
A 67-layer Damascus-pattern utility knife at 60 ± 2 HRC, with a honeycomb resin handle for close, careful detail work.
Some jobs are awkward with a chef knife: coring a tomato, cutting a sandwich, trimming fat from a steak. The blade is too long and the tip too far from your hand. This utility knife is 5" (12 cm), short enough to work close and long enough to slice instead of nick.
The 67-layer Damascus-pattern steel is vacuum heat-treated to 60 ± 2 HRC, which helps it keep a fine edge through fruit skin and raw protein.
The handle is honeycomb aluminum-resin with copper rings at the collar, sized to fill a smaller grip. Hand-wash it and store it dry.
Hand-wash and dry immediately, then store dry. Hone regularly. Not for bones or frozen food.
