Santoku vs Chef’s Knife: Which Primary Blade Fits You

Chef’s knife for rocking sweeps; santoku for flat push cuts. Pick one primary blade for your wrist — not both on day one.

Santoku and chef’s knife both claim the centre of the board. The difference is tip, belly, and the motion your wrist already prefers — not which word sounds more professional.

In brief

Choose a chef’s knife for rocking and longer sweeps; choose a santoku for flat push cuts and shorter tips. Most home cooks need one primary blade — not both on day one.

Shape, not nationality slogans

A Western chef’s knife usually curves along the belly so you can rock through herbs and onions. A santoku is flatter, often with a sheep’s-foot tip, built for up-and-down or push cuts. Both can be German or Japanese steel; the silhouette decides the motion.

For the wider Japanese family — gyuto, nakiri, petty — see Japanese knife shapes.

When the chef’s knife wins

Longer protein, large squash, and cooks who already rock the blade will prefer a 16–20 cm chef’s knife. Sets built around German geometry assume that motion — what you actually use from a German set.

When the santoku wins

Vegetable-heavy prep, shorter counters, and wrists that dislike deep rocking favour a santoku. The tip is less likely to stab the board on every stroke. As a gift, it reads clearer than a vague “chef knife” — santoku as a gift.

Do you need both?

Not at first. Master one primary blade, then add a specialist (paring, bread, or deboning). Owning both before you have a habit usually means one stays dull in the block.

Maintenance is the same discipline

Hone lightly; sharpen when honing stops helping — honing vs sharpening. Thinner santoku edges chip sooner on bone; thicker German heels forgive more and need more frequent honing.
