Season, dry, and oil after washing. Smoke is part of a hard sear; medium heat and the right oil keep it manageable. 21 cm for small kitchens and weeknight steaks. Preheat gradually.
Materials & Care
A cast-iron plate with a ridged surface and side handles.
Bring it up to heat gradually and use a high-smoke-point oil. After cooking, hot water and a brush, then dry it fully and wipe a thin film of oil over it. Never put a hot plate into cold water.
