Shape, not nationality slogans

A Western chef’s knife usually curves along the belly so you can rock through herbs and onions. A santoku is flatter, often with a sheep’s-foot tip, built for up-and-down or push cuts. Both can be German or Japanese steel; the silhouette decides the motion.
